3 summer breakfasts to start your day right

As a mega breakfast lover, I thought it would be a nice idea to share some of my fave summer breakfasts with you guys this month. Porridge is pretty much my favourite ever but in the summer it’s sometimes a little too warm for it, or I just fancy a change, so these are the breakfasts I’m really into at the moment that are making me feel all summery.  

 

Smoothie Bowl Overnight Oats 

You will need:

A glass of your fave smoothie – I love making this with a berry smoothie

½ cup oats

2 tablespoons chia seeds

 

Method: 

  • Mix the oats and chia seeds together in a bowl. 
  • Make up your smoothie and then pour it over the oats and mix well. 
  • Cover and leave in the fridge overnight to set. 
  • In the morning, top with fruit and some granola or nuts. 

 

Pair with: T Plus Multea  

 

Peanut Butter + Jam Overnight Oats 

You will need: 

½ cup oats

1 tablespoon chia seeds 

1 tablespoon ground flax seed

1 cup almond milk 

1 banana 

2 tablespoons PB

2 teaspoons jam 

 

Method: 

  • Mix together the oats, chia seeds and ground flax seeds in a bowl. 
  • Mash the banana using a fork until smooth and add this to the bowl along with the almond milk and mix everything together well. Leave to sit for around 10 minutes. 
  • Add some of the oat mixture into a jar and then a tablespoon of PB and teaspoon of jam. Repeat this and then finish off with a layer of the oat mixture.  Pop in the fridge overnight to set. 
  • Top with fresh strawberries or raspberries in the morning. 

 

Pair with: T Plus Boost 

 

Fruit Cereal Bowl 

You will need: 

1 apple

1 peach 

5-6 strawberries 

a small handful of blueberries 

1 medjool date 

1 tablespoon chia seeds 

1 tablespoon desiccated coconut 

¼ cup cashew nuts 

1 brazil nut 

1 tablespoon ground flaxseed 

Granola 

Milk of your choice (I use almond milk) 

 

Method: 

  • Chop up the apple, peach, strawberries and date into small pieces and add to a large bowl along with the blueberries. 
  • Roughly chop the cashews and brazil nut and add these along with the chia seeds, desiccated coconut and flaxseed to the bowl. 
  • Sprinkle over some granola and pour over your favourite milk.
